Lemon Berry Sorbet


Sometimes I want something I don't directly know how to make. But to be honest and hopefully not too unhumble...I've got some skills in the kitchen. I don't mind taking a shot at figuring something out. It's a creative joy.
I also don't mind buying my kids birthday presents that I've wanted to have a good reason to buy for a looong time. Like an ice cream maker attachment for our Kitchen Aid.
Sweet Surrender, this thing is da bomb.
Sunday night I took a crack at making some sorbet.
I looked over several recipes online and got some general proportion advice, and set out to make a healthy version of my favorite sonic drink- the Lemon Berry Slush.
We eat lots of fruit- and love berries- especially frozen blue berries. Daily. Thank you, bulk food stores.
So, I took
3 C frozen Blueberries
2 C fresh strawberries
And I processed them in the food processor until they were well-combined. If you don't have a large processor, but do have a mini-prep, you could do this in batches.
Then I combined
1 C water
1/2 C Truvia (Stevia-based sweetener)
Zest and juice of 1 large lemon
1/2 C raspberry preserves
Then I turned the food processor back on and poured in the liquid in a steady stream and processed until it was all fully incorporated.
Then I threw it in the ice cream maker and in about 20 minutes we got a really, really, really good sorbet. All that I wanted and more.
Oh, shut up Megan.
You know what???
I said the phrase, "THIS STUFF IS FREAKING AWESOME!!!" about five times as I savored through my dish of amazingness.
It's simple. It's full of goodness. It's not mystery food. I know what's in there. And you can change it up according to what you've got on hand. And it's thoroughly amazing.
Basically, I'm going to start making it in huge batches and we're going to eat it almost every day.
Now you know.

I'm not a huge ice cream fan, but sorbet, that's a whole other story :)
I think I may need to get that attachment. :)

We love Sorbet too and it's always better to make it at home so you know all of the ingredients along with adding your own twists to the recipe! :-)

That sounds so amazing that it makes me want to run out and buy a kitchen aid complete with ice cream maker and all the ingredients TODAY!

In a crazy coincidence, I went to a Taste of Home cooking show last night (crazy fun) and she demonstrated this very attachment. And made berry sorbet.

Which really just makes me want to try it more ...
